Winemaking
Alcohol is removed via vacuum evaporation. This vacuum distillation process consists of two stages. The first involves passing the wine through a distillation column to extract highly volatile compounds (aromas) into a small alcoholic fraction at a temperature of 30°C. The second stage involves passing the wine through the column again to remove the alcohol, then reintroducing the aromatic fraction extracted during the first stage into the dealcoholized wine.
